Steps

  1. Cut up the chicken according to the diagram in the appendix
  2. Place in a pot with a small amount of warm water
  3. Bring to a boil and remove any foam that forms on the surface
  4. Add cold water to the pot
  5. Bring to a boil again and remove any foam
  6. Add 2.5 teaspoons of salt
  7. Simmer for 2 hours
  8. Add the carrots and onion
  9. Bring to a boil again and remove any foam
  10. Simmer for an additional 30 minutes
