Viet Omelet

- 4 eggs
- 50 g glass noodles (soaked in warm water until soft, then roughly chopped)
- Wood ear mushrooms (soaked and sliced)
- 100g pork minced meat
- 4 tbsp fish sauce
- Green onions, chopped
- Salt and pepper to taste
For Serving
- Steamed white rice
- Additional fish sauce for dipping (optional)
- Sliced cucumber (optional)
Steps
- Soak the glass noodles in warm water until soft (about 10 minutes), then drain and roughly chop.
- Soak the wood ear mushrooms in warm water until soft (about 15 minutes), then drain and thinly slice.
- In a large bowl, beat the eggs until well mixed.
- Add the softened glass noodles, sliced wood ear mushrooms, minced pork, fish sauce, chopped green onions, salt, and pepper to the beaten eggs. Mix well to combine all ingredients.
- Heat a little oil in a frying pan over medium heat.
- Pour the egg mixture into the pan and spread it evenly.
- Cook for about 4-5 minutes until the bottom is set and golden brown.
- Flip the omelet carefully and cook the other side for another 4-5 minutes until fully cooked through.
- Serve hot with steamed white rice.
